Kampachi: Kona Kampachi at Sansei


Ahhh, the kona kampachi. Sushi-grade sustainable fish farmed right off the coast of the Big Island. Also called "amberjack," which is a great name for a science-fiction or fantasy character. Some swashbuckler tomboy girl -- "Amberjack, set the plasma sails! It's time to go comet-diving with the star dolphins!"

Anyway, this little meal here is a little raw serving of kona kampachi at Sansei in Waikoloa. Their food is good, not great, but their presentation is knock-your-booties-off good.

The fish itself is sweet, not at all fishy, and very fatty. With all those good fats that in 10 years they'll be telling us are secretly bad fats or something, fats that will give us some kind of heart-exploding disorder.

Here's a funny little fish-health fact, though -- ever see "butterfish" on a menu? Sometimes called "escolar" in hoitier-toitier foodie circles?

Yeah, do a Google search on it.

Then, do a Google search on "butterfish" and "anal leakage."

Seriously. Fascinating stuff. Point being, if you want to eat butterfish, do so with an extra pair of khakis laying around.
